The other night it was time to hang out with my lovely sisters again! We decided to make a nice dinner and relax and visit for the night.
We started with some delicious pizza stuffed mushrooms that Char made. She cut up some pepperrettes to act as the pepperoni. Her husband hunts and had recently returned from some duck hunting sooo….. Any guesses what they were made of?? Goose meat, haha, they were really good.
Then we had some Caesar salad, cheesy garlic bread and my specialty pasta dish!
I have been making this pasta dish for a number of years and everyone always wants to know what it is called so they can make it. I have no recipe (just in my head) and no name for it but I will share with you how it is made. I will warn you….this is not light….but I promise you, it is worth the calories. Its food like this that make me thankful for Long Runs!
Ingredients:
Bacon
Fresh vegetables of your choice (I usually do 2 different colours of bell peppers)
Mushrooms
Red Onion
Garlic (I use lots, 2 tablespoons)
Italian Seasoning (to taste)
Fresh ground Salt and Pepper (to taste)
1 can of condensed Cream of Chicken Soup
Alfredo Sauce (I bought a jar of this)
Pasta of choice
Parmesan or Asiago Cheese (freshly grated)
Start with cooking the bacon. Set aside cooked bacon. Drain some of the bacon grease but keep some of it to sauté the vegetables, onions, mushrooms.
Add the garlic, spices, salt, and pepper. When the mix is cooked to your liking, add in the soup, sauce, crushed up bacon and allow simmering for a few minutes. Pour a generous amount over a serving of pasta and top with some cheese. Voila!
The next morning I got up nice and early and headed out for my long run of the week. My previous night of pasta indulgence powered me up for my entire 22km (13.75m) run. Seriously!
How is everyone doing with the #thirtyin30 mileage for the month? What mileage are you at?
I thought I would be a keener and go for 30 in each week for November-I am up to 76 miles for the month.
